Protein brioche bread

Let’s be honest, nothing beats the taste of brioche. I’ve tried a few protein brioche bread recipes, but the dough never really risen and the brioche became very compact. The taste was great, but the consistency was just ok. So I kept trying and finally got the consistency I wanted and I can tell you that the brioche tastes and smells so great!

For this recipe you need:

  • 200g spelt flour
  • 50g protein powder neutral
  • 25g coconut sugar
  • 15g protein butter or light butter
  • 15g apple puree
  • 20g yeast
  • 110ml almond milk
  • some salt
  • some egg white

First mix the dry ingredients in a bowl. Form a hole in the middle and crumble the yeast into it. Heat the almond milk a little (goes great in the milk frother) and mix it with the butter and the apple puree. Now we put the milk mixture into the hole and mix everything together until the dough is elastic and stretchy. Now cover and let it rest in a warm place for about 40 minutes.

As soon as the dough has risen, put some flour on a surface and knead the dough for a short time. Now braid a braid. I have braided the braid with two strands. As soon as you are satisfied, place the braid on a baking tray or in a form and let it rest for a short time.

Preheat the oven to 160°C circulating air and brush the brioche with egg white. Bake in the middle of the oven for about 30 minutes. After about 10 minutes I covered the brioche with aluminium foil so that it doesn’t get too dark.

The complete brioche has: 1129 kcal | 171.8g Carbohydrates | 72.4g Protein | 13.8g Fat

    Hallo Diana,
    gestern in ich zufällig auf deinen Protein Hefezopf gestoßen und habe diesen sofort gebacken. Ein wenig habe ich das Rezept verändert :-). Anstatt Koskosblütenzucker habe ich Dattelmelasse genommen und die Mandelmilch habe ich durch Wasser ersetzt und anstatt Protein Butter (habe ich keine) nahm ich einfach Cocosöl.
    Ich muss dir sagen, ich bin mega begeistert! Herzlichen Dank.
