I never was a big fan of spätzle, even though I live in Späzleland! But somehow I wanted to cook my own protein cheese spätzle. Without further ado I ordered a spätzle grater, went into the kitchen and did some experiments. When I tried the spätzle, my answer was: “Woah how delicious!” and I could really get used to eating spätzle more often!
For this recipe you need:
- 75g spelt flour
- 50g protein powder neutral
- 1 egg
- 20g low-fat quark
- spices
- some water (approx. 50ml)
- 1 onion
- 40g low-fat cheese
Mix flour, protein powder, egg, low-fat quark, spices and water to a smooth dough. Be careful with the water so that the dough doesn’t become too liquid. Boil water in a pot and grate the spaetzle into it. As soon as they float on top, you can take them out. Sauté the onion in a pan and add the spaetzle. At the end add the cheese and as soon as it has melted the spaetzle are done. I also fried some vegetables. The quantity is enough for two portions.
